Zucchini Bikini–Chocolate Cake Sounds Better

Like Bill Cosby you can consider cake to be a nutritious start to the day because this one has a vegetable in it:

Chocolate Zucchini Cake

 Cream together:

¾ C.    oil
2 C.     sugar
3          eggs 

Add and mix:

2 tsp.    vanilla
½ C.    cocoa powder
1 T.      baking powder
1 ½ tsp. baking soda
1 tsp.    salt
1 tsp.    cinnamon
2 tsp.    orange zest (Option: a few drops of orange oil like for candy-making may be substituted.
½ C.    milk
2 C.     grated zucchini
2 ½ C. flour (Option: substitute 1 C. whole wheat flour for 1 C. white flour.)
Pour into greased and floured bundt pan. Bake at 375 degrees for 45 minutes.

 Chocolate Frosting

 4 ¾ C. powder sugar
½ C.    cocoa powder
½ C.    margarine or butter, softened
1/3 C.  boiling water
1 tsp.    vanilla
 
Mix powdered sugar and cocoa. Add margarine, boiling water, and vanilla.  Beat with mixer on low till combined.  Beat for 1 minute on medium speed.  Cool for about 20 minutes till spreading consistency.  Drizzle or spread over top and down sides of bundt.

Gorilla Poooos A.K.A. No Bake Cookies

Here you go, Mom.  This is the recipe for Gorilla Poos that I learned to make in HomeEc at Butler Middle School.  These are perfect for summer days when its too hot to turn on the oven but you still need a sugar/chocolate fix:

Bring to a boil (I use the microwave.):

2 C. sugar

1/2 C. butter (or shortening)

1/2 C. milk

3 T. cocoa

1/4 t. salt

Pour the above mixture over following ingredients which have been assembled in a mixing bowl:

3 C. quick-cooking oats

1 t. vanilla

1/2 C. nuts (optional)

1 C. coconut (optional)

1 C. semi-sweet choco chips (optional)

After combining the liquids with the solids use a small ice cream scoop to form the cookies and place on wax paper to solidify.  I let the mixture cool in the bowl a little before scooping so the cookies don’t slump.
